Hidden Veggie Chocolate Muffins
Eating healthy does not have to mean skipping on indulgent treats - and these chocolate muffins are a perfect example! Chocolatey, rich and full of gooey goodness, they’re a great way to sneak in extra veggies!

Ingredients
250 g mashed banana (about 2 large)
100 g grated carrots
30 g spinach or kale
2 large eggs
60 ml maple syrup or honey
70 g ripe avocado (about 1⁄2 medium)
1 tsp vanilla extract (5 ml)
2 tsp apple cider vinegar (10 ml)
100 g oat flour
25 g cocoa powder
1 tsp baking powder (4 g)
1 tsp baking soda (5 g)
1 tsp cinnamon (3 g)
1⁄4 tsp salt (1 g)
Method
1.
Preheat oven to 180°C and line a 12-cup muffin tin.

Blend/whisk banana, avocado, carrots, spinach, eggs, syrup, and vanilla until smooth. Stir in vinegar.

In another bowl, mix oat flour, cocoa, baking powder, baking soda, cinnamon, and salt.

Fold dry into wet.
5.
Divide into muffin cups and bake 20–25 min, until a toothpick comes out clean. If using mini muffins bake for 15-20 min instead.
