Butternut Squash Soup

 
 

This butternut squash soup is a comforting, flavourful staple that delivers six plant points in one bowl. Ingredients


2 medium butternut squash

1 shallot or onion

2 piquillo peppers

Handful of plum tomatoes

3 large tbsp of cottage cheese (about 200g)

1 head of garlic

360ml of vegetable stock

Olive oil


Method


1.

Roast all veg with oil, salt & pepper at 200°C for about an hour and a half (or less if chopped smaller).

2.

Blend with vegetable stock , cottage cheese until smooth.

3.

Adjust seasoning if needed
