Apple & Blueberry Oat Bars
These berry oat bars are a satisfying, naturally nourishing snack. Oats and fruit provide fibre to support gut health, while berries contribute antioxidants, including anthocyanins from blueberries. Simple to make and easy to store, they’re a balanced option for a mid-afternoon snack, lunchbox addition or a convenient energy boost when you need it.

Ingredients
3 bananas
90g of oats
2 tbsp peanut butter
90g blueberries
120g apple, in cubes
150g Greek or coconut yoghurt
Method
1.
Mash bananas in a baking dish, add chopped apple, blueberries, oats, nut butter and Greek yoghurt
2.
Mix until well combined and spread even to cover all the surface
3.
Bake at 180C for 35-40 min until golden in the top
4.
Let cool and store leftovers I’m the fridge for up to 5 days
