Berry Oat Bars
These berry oat bars are a satisfying, naturally nourishing snack. Oats and fruit provide fibre to support gut health, while berries contribute antioxidants, including anthocyanins from blueberries. Simple to make and easy to store, they’re a balanced option for a mid-afternoon snack, lunchbox addition or a convenient energy boost when you need it.

Ingredients
180g oats
2–3 ripe bananas
2 tbsp peanut butter or almond butter
80g blueberries
80g strawberries, chopped
2–3 tbsp Greek yogurt
Optional: 1–2 tbsp honey or maple syrup (depending on sweetness preference)
Method
1.
Preheat the oven to 180°C (160°C fan). Line or lightly grease a baking dish.
2.
In a large bowl or directly in the baking dish, mash the bananas until smooth.
3.
Add the oats, nut butter and Greek yogurt, and mix well.
4.
Fold through the blueberries and chopped strawberries.
5.
Spread evenly in the baking dish and smooth the top.
6.
Bake for 25–30 minutes, until set and lightly golden.
