Blueberry and Nut Chocolate Bars
These bars are a delicious balance of healthy fats, fibre, and antioxidants that make them both satisfying and nourishing. Blueberries bring natural sweetness and are packed with antioxidants that help protect our cells from oxidative stress. Plus, using >75% dark chocolate counts as an additional plant point! Perfect as a mid-afternoon snack or a sweet treat.

Ingredients
200g of mixed nuts
150g blueberries
100g dark chocolate
2 tbsp or tahini
Pinch of sea salt
Method
1.
Preheat the oven to 180°C (fan 160°C) and spread the nuts out evenly on a baking tray. Roast for 8–10 minutes until golden and fragrant. Allow to cool slightly.

Melt the dark chocolate in a microwave-safe bowl, heating in 30-second intervals and stirring in between until fully melted and smooth.

Stir in the tahini and mix well until the chocolate and tahini are completely combined.

Add the roasted nuts and blueberries to the chocolate mixture, stirring until everything is evenly coated.
5.
Pour the mixture into a lined baking dish or loaf tin, spreading it out evenly and pressing down lightly.
6.
Refrigerate for at least 1 hour, or until fully set.
7.
Slice into bars and store in the fridge in an airtight container.
