Tomato & Whipped Bean Toast

 
 

This whipped bean toast is satiating, tasty, and packed full of plant points (remember - 30 per week is optimum for gut health!)

Ingredients


Sourdough bread

Toasted pumpkin seeds and pine nuts

Handful of sprouts

Butter bean spread

700g good quality butter beans

2 tbsp of tahini

1 tbsp of olive oil

Pinch of salt

Juice of 1 lemon

Marinated tomatoes

500g different colour cherry tomatoes, save a handful to blister

1 tbsp of olive oil

1 tsp of vinegar

Pinch of salt

Hot honey

4 tbsp of honey

Pinch of chilli flakes


Method


1.

Blend all the ingredients for the butter bean spread

2.

Cut the cherry tomatoes in quarters and mix with the rest of the ingredients, set aside to marinade

3.

Add honey and chilli flakes to a small pot and warm until it starts to bubble

4.

Add olive oil to a pan, add the slices of sourdough and the tomatoes reserved. Remove when slices are toasted and tomatoes are blistered.

5.

Assemble: spread butter beans over the toast, add marinated tomatoes and blistered tomatoes, finish with hot honey, toasted seeds and sprouts.
