This simple two-ingredient focaccia is the easiest bread you’ll ever make. Soft, fluffy, and delicious, it’s perfect for cheeseboards, serving alongside soups and salads, or slicing up for sandwiches. With minimal effort and maximum flavour, it’s the ideal crowd-pleasing staple to have on hand.

Ingredients


250 g self-rising flour

240 ml sparkling water (room temp)

35 ml olive oil (about 2 tbsp + 1 tsp)

Sea salt flakes (optional)

Fresh rosemary (optional)


Method


1.

Preheat oven to 220°C. Line a 20×20 cm pan with parchment and lightly oil it.

2.

Mix flour and sparkling water in a bowl until a sticky dough forms.

3.

Rest dough for 30 minutes.

4.

Add 5 ml (1 tsp) olive oil on top, then stretch and fold the dough about 10 times (wet hands to prevent sticking).

5.

Pour 30 ml (2 tbsp) olive oil into the pan. Transfer dough and gently spread it out.

6.

Drizzle the remaining oil on top and dimple the surface with oiled fingers.

7.

Bake for 20–25 minutes until golden.

8.

Sprinkle salt and rosemary while warm. Cool 10 minutes before slicing.
