Apple Pie Rice Paper Rolls

Ingredients
6 rice paper sheets
2 apples
2 tbsp butter
2 tbsp maple syrup
1 egg, beaten with a splash of milk
A pinch of cinnamon
Method

Make the filling: Peel and dice the apples into small cubes. Cook them in a pan with butter, maple syrup and cinnamon until soft, sticky and almost dry.

Prepare the wrappers: Dip 2 rice paper sheets into the egg mixture to soften, then overlap them slightly to form a larger base.

Assemble: Spoon one-third of the apple filling along the center of the rice paper and roll it up tightly into a log. Then, coil it around itself to form a spiral.
4.
Bake: Place on a lined tray and bake at 180°C for 20 minutes, or until golden and crisp.
