We’re adding a second addition to our ultimate meal prep series! We’ve got you covered for breakfast, lunch and dinner - with our twist on the viral cottage cheese grain bowl.

All your basis are covered - protein, healthy fats and tonnes of gut friendly fibre - it’s a no brainer for those of us with a busy working week.

Ingredients


Weetabix meal prep

2 weetabix

70ml almond milk

2 tsp of honey

150g Greek yoghurt

150g raspberries

Caramelised Dates & Bananas

1 banana

6 dates

Olive oil

Cinnamon powder

150g of greek yoghurt

Handful of nuts and seeds

Cottage Cheese Bowl

1/2 block of tofu

1/2 can of black beans, drained

1tsp of cumin

2 tsp smoked paprika

1/2 tbsp tomato paste

1/2 tbsp chipotle paste (optional)

1 avocado

1-2 sweet potatoes

150g of cottage cheese


Method


Weetabix meal prep

1.

Add weetabix, milk and 1 tsp of honey to a small container. Mash to create a base.

2.

Cover with Greek yoghurt

3.

Mash raspberries with leftover honey and layer over yoghurt

Caramelised Dates & Bananas

1.

Slice banana and dates

2.

Fry in a pan with olive oil and cinnamon powder. Dates will become crispy and bananas will caramelise.

3.

Serve over geek yoghurt and finish with nuts and seeds.

Cottage Cheese Bowl

1.

Grate tofu and fry with cumin, smoked paprika, tomato paste and chipotle paste, if using. Season with salt to taste. Fry until crispy.

2.

Add black beans and continue to fry for a few more minutes. Cube the sweet potatoes and roast until cooked and crispy

3.

Assemble the bowl including the cottage cheese and avocado.
