Parmesan Butter Beans
These crunchy parmesan beans are the perfect, high fibre, tasty snack. Butter beans are rich in both soluble and insoluble fibre, contributing to a feeling of fullness and aiding digestion.

Ingredients
2 cans of butter beans
4 tbsp olive oil
2 tsp smoked paprika
Salt to taste
60g Parmesan cheese
80g of sweet corn
Method
1.
Drain and rinse butter beans
2.
Mix with olive oil, salt and paprika
3.
Bake for 25-30 min at 180C, until crunchy
4.
Sprinkle Parmesan and sweet corn to the top
5.
Return to the oven for 15 min
6.
Save into an air tight container
