Mocha & Matcha Chia Pudding

 
 

If you’re a coffee or matcha lover, these creamy chia puddings are the perfect way to start (or end) your day. Packed with protein from Greek yogurt, fibre from chia seeds, and a gentle energy boost from coffee or matcha, they’re as nourishing as they are delicious! Simple to prep, they make an energising breakfast, wholesome afternoon pick-me-up or delicious evening sweet treat.

Ingredients


Mocha Chia Pudding:

480 g Greek yogurt

25 g cacao powder

160 g chia seeds

60 ml honey or maple syrup

1⁄2 tsp vanilla extract

60 ml brewed coffee, cooled

240 ml almond milk (or milk of choice)

Pinch of sea salt

To serve: extra Greek yogurt + a dusting of cacao powder

Matcha Chia Pudding:

480 g Greek yogurt

160 g chia seeds

60 ml honey or maple syrup

1⁄2 tsp vanilla extract

60 ml prepared matcha (cooled)

240 ml almond milk (or milk of choice)

To serve: extra Greek yogurt + a dusting of matcha powder


Method


1.

Prepare each flavour: In two separate bowls, combine all ingredients for each chia pudding flavour. Stir well to remove any lumps and ensure the chia seeds are evenly distributed.

2.

Cover and refrigerate both mixtures for at least 4 hours, or ideally overnight, until thick and pudding-like.

3.

Top with a couple of spoonfuls of Greek yogurt and smooth until covered, dust with either cacao or matcha powder to finish.

4.

Store in the fridge for up to 4–5 days - perfect for double breakfast meal prep!
