Chickpea Bread with EVOO Butter

 
 

Looking for a way to easily boost your fibre? This bread will do it! It contains psyllium husk, which is a rich source of soluble fibre that supports gut health, helps keep you regular and can contribute to cholesterol and blood sugar regulation. Plus 3 types of seeds, adding extra fibre, healthy fats (including omega-3s) and a boost of plant diversity.

For the bread

  • 300 g chickpea flour

  • 40 g psyllium husk powder

  • 420 ml water

  • 30 g pumpkin seeds

  • 30 g sunflower seeds

  • 30g chia seeds

  • 3⁄4 tsp salt

  • 11⁄4 tsp baking powder

  • 3⁄4 tsp baking soda

  • 11⁄2 tbsp apple cider vinegar (or lemon juice)

For the EVOO butter

  • 150ml extra virgin olive oil

  • Sea salt


Method


1.

Preheat oven to 180°C and line a baking tray with parchment.

Make gel: Whisk psyllium husk powder with water in a bowl. Let it sit 2–3 minutes until thick.

Mix dry ingredients: In another bowl combine chickpea flour, pumpkin seeds, sunflower seeds, chia seeds, salt, baking powder and baking soda

4.

Pour vinegar over the dry mix, add the psyllium gel, and mix/knead into a sticky dough.

5.

Shape: Place dough on the baking tray and shape into a flat loaf with wet hands. Score the top.

6.

Bake 50–55 minutes.

7.

Cool completely before slicing.
