Nut & Seed Chocolate Discs
These nut and seed fibre discs are a simple make-ahead snack, perfect for keeping in the fridge or freezer. Packed with a mix of nuts, seeds and dark chocolate, they’re naturally rich in fibre and feel like a sweet treat at the same time. Great for lunchboxes, after-school snacks or whenever you want something sweet that’s still satisfying.

Ingredients
60g skin on almonds, roughly chopped
40g walnuts, roughly chopped
30g pecans, roughly chopped
30g hazelnuts, roughly chopped
30g peanuts, roughly chopped
2 tbsp pumpkin seeds
2 tbsp sunflower seeds
1 tbsp sesame seeds
1 tbsp linseeds
150g dark chocolate (70%+ cocoa)
Pinch of sea salt
Optional toppings:
1 tsp cacao nibs
1 tsp desiccated coconut
1 tsp dried cranberries
1 tsp pistachio kernels, roughly chopped
Method
1.
Add all chopped nuts and seeds to a large bowl and mix well so everything is evenly distributed.

Place 1-2 tbsp (depending on the desired size of the discs) onto a baking tray and use a tablespoon to create a circular disc shape.
3.
Gently melt the dark chocolate until smooth - either 30 second bursts in the microwave or in a bowl over a boiling pan of water.
4.
Pour the melted chocolate into a freezer bag and cut the corner off to create a piping bag.
5.
Pipe the dark chocolate onto the individual discs.
6.
Sprinkle on the toppings of your choice.
7.
Chill in the fridge for 25-30 minutes until firm.
8.
Keep in an airtight container in the fridge for up to 5 days or freeze for longer storage.
