Almond & Dark Chocolate Cookies
Crisp, nutty and perfectly dunkable, these simple almond biscuits are finished with a dark chocolate coating for the ultimate afternoon treat. Made with just a handful of ingredients, they're a delicious accompaniment to a cup of tea and a great example of how simple recipes can still deliver on flavour.

200g almond flour
3 tbsp maple syrup
1 tsp vanilla extract (optional)
75g dark chocolate (70% cocoa or higher)
Method
1.
In a bowl, mix together the almond flour, maple syrup and vanilla extract (if using) until a dough forms.

Place the dough onto the lined baking tray and flatten to approximately ½ cm thick. You can use your hands or a rolling pin.

Using a knife or pizza cutter, lightly score the dough into your desired biscuit shapes. Pierce each biscuit a few times with a fork.
4.
Bake for 10–12 minutes, or until lightly golden around the edges.
5.
Remove from the oven and carefully re-cut along the scored lines while still warm. Allow to cool completely before separating into individual biscuits.
6.
Melt the dark chocolate and dip half of each biscuit into the chocolate. Place on a lined tray or plate and allow the chocolate to set.
