Orange & Olive Oil Cake

 
 

This orange olive oil cake is everything you could want from a fresh, feel-good bake! Made with fragrant orange zest and juice, and rich extra virgin olive oil, it has a beautifully light, moist texture and a delicate citrus flavour in every bite.

  • 1-2 large Oranges - 300g, unpeeled, boiled

  • 190 g Self-Rising Flour

  • 150 g Unrefined Cane Sugar

  • 120 ml Almond Milk

  • 120 ml Mild-Flavor Olive Oil

  • 1 tsp Vanilla Extract


Method


1.

Preheat oven to 180°C.

Boil the whole orange for 10 minutes. Transfer to an ice bath and cool for 5 minutes.

Whisk together the flour and sugar in a large bowl.

Roughly chop the orange (skin on) and blend with the milk, oil, and vanilla until smooth.

5.

Pour the orange mixture into the dry ingredients and stir until a smooth batter forms.

6.

Transfer to the prepared pan and bake for 45–50 minutes, or until a skewer comes out clean.

7.

Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

8.

Optional: Drizzle with orange icing (icing sugar and orange juice)
