Summer Pasta

 
 

This easy-to-make veggie pasta is a great recipe for summer months. It uses tagliatelle with the addition of courgetti to increase fibre. Don’t forget you can add some mozzarella on the side to increase the protein content, plus it tastes so good!

Ingredients


4 tagliatelle nests (or about 150g)
1 red onion chopped
250g of mixed cherry tomatoes
1 tsp or oregano
1/2 tsp of chilli flakes
Olive oil
1 fresh mozzarella A handful of basil chopped 1 courgette (made into ribbons or noodles)


Method


1.
Cook pasta according packing instructions until al dente, rinse and reserve 2-3 tbsp of pasta water.

2.
Fry onion and tomatoes with olive oil until soft, add pasta water, oregano and chilli.

3.
Stir in courgette noodles and cooked pasta. Cook for further 2 min while mixing and remove from the heat.

4.
Serve with fresh mozzarella and basil.
