Perfect for a simple, naturally sweet bake or a wholesome snack to keep on hand. These cookies rely on just dates and almond flour, giving them a soft texture and rich, caramel-like sweetness without added sugar. Almond flour provides healthy fats and a bit of protein, while dates offer a fantastic source of fibre, making them a satisfying, feel-good treat.

  • 225g almond flour

  • 220g pitted dates


Method


1.

Preheat oven to 180°C. Line a large baking sheet with parchment paper.

Soak the dates in boiling water for 5 minutes, then drain

Add almond flour and dates to a food processor.

The batter is ready when you are able to form ball of dough as you squeeze it with your hands. It should stick together nicely. If too dry, simply process again adding a little bit of the date water (drained), or maple syrup. If too wet, add a little more almond flour and process again.

Roll 1 tablespoon of dough between your hand to form a ball.

Place each cookie dough ball onto the baking sheet covered with parchment paper.

7.

Press with the cookies with a fork.

8.

Repeat until all cookies are formed.

9.

Bake for 10-12 minutes or until slightly golden brown on the edges and bottom.

10.

Cool on the baking sheet for 15 minutes before transfer to a cooling rack. The cookies are soft banana cookies and won't firm up much.
