Flaxseed Cookies
Perfect for a quick bake with kids or an easy snack to have on hand. The combination of oats and flaxseed provides a great source of fibre to support gut health, while flaxseed also offers plant-based omega-3 (ALA) fats. The nut butter adds healthy fats and a little protein.

2 ripe bananas, mashed
150g rolled oats
2 tbsp ground flaxseed
3 tbsp smooth nut butter or tahini
1 tsp vanilla extract
Optional: chopped hazelnuts
50g dark chocolate chips
Method
1.
Preheat the oven to 180°C (160°C fan) and line a baking tray with parchment paper.

In a large bowl, mash the bananas until mostly smooth.
3.
Add the nut butter or tahini and mix until combined.
4.
Stir in the oats and ground flaxseed to form a thick cookie dough.
5.
Fold through the chocolate chips and chopped nuts.
6.
If the mixture feels dry, add a splash of milk to help it come together.
7.
Scoop spoonfuls onto the tray and gently flatten into cookie shapes.
8.
Bake for 12–15 minutes until lightly golden around the edges.
9.
Allow to cool on the tray for 5–10 minutes before transferring to a rack.
