Festive Porridge

Add a festive flair to your porridge bowl! Deliciously spiced, full of fruit and fibre, this really is a winning winter warmer to get you out of bed in a hurry!

Ingredients


120g oats
360ml milk (I used oat)
40g milled flaxseed
80g frozen cranberries
2 red apples, peeled, cored and sliced
1/2 tsp mixed spice
1/2 tsp cinnamon
1 tbsp maple syrup
Handful dried cranberries
Handful hazelnuts


Method


1.
Pop a pan on a low heat, and warm through the sliced apples along with 3 tablespoons of water, until softened. Add the cranberries, spices and maple syrup, and bring to a gentle simmer for 5 minutes, until soft and juicy.

Pour the oats and milk into a saucepan and bring to the boil, stirring until thick and creamy, around 5 minutes. Add in more milk, if needed. Halfway through, pour in the milled flaxseed and stir.

3.
Serve the porridge topped with the spiced fruit, dried cranberries, and scattered with hazelnuts. The spiced fruit topping can also be kept in the fridge for up to 3 days to enjoy later.
