Carrot Cake Baked Oats
We’ve seen so many baked oats variations, but I have to say I think these may be our favourite! Backed full of fibre & plant points, these baked oats are packed full of nutrients & beneficial compounds that are sure to satisfy & nourish!

Ingredients
200g Oats
30g Vanilla protein powder (optional)
1 carrot, grated (leave the skin on for extra fibre!)
2 bananas
1-2 tbsp honey
1 tsp baking powder
1 tsp cinnamon
1 handful of walnuts, chopped
480ml milk of Choice
6 tbsp Greek yogurt (or yogurt of choice)
Optional: 2 tbsp almond butter
Method
1.
Mash the bananas in the chosen baking dish, until smooth.
2.
Add the rest of ingredients (including almond butter, if using) and mix well until fully combined.
3.
Bake at 180C for 30 min to 35 min, until golden on the top.
4.
Spoon over the yogurt and chopped nuts and serve.
5.
Keep refrigerated in an airtight container for up to 3-4 days.
