Pea, Mint & Miso Soup
This delicious, comforting soup is perfect for the colder months! Packed with peas, which provide plant-based protein and fibre, it’s a nutritious and satisfying way to warm up as the temperatures drop.

Ingredients
900g frozen peas
1 potato
1 onion
4 garlic cloves
1 litre vegetable stock
1 tbsp miso paste, optional
1 large bunch of fresh mint
1 lemon
2 tbsp olive oil
Salt
Black pepper
Method
1.
Heat the olive oil in a large saucepan over medium heat. Finely dice the onion, add it with a large pinch of salt, and cook for 5 minutes.

Peel and finely dice the potato. Add to the pan along with the miso paste, if using. Cook for 10–15 minutes, stirring occasionally, until the onion and potato start to soften.

Mince the garlic, add to the pan and cook for 1 minute, until fragrant. Add the frozen peas and vegetable stock. Bring to a simmer and cook for 5–10 minutes, or until the potato is completely tender.

Add a large handful of mint leaves, cover with a lid and remove from the heat for a couple of minutes.

Blend until completely smooth. Return to the pan and gently bring back to a simmer.
6.
Season to taste with a squeeze of lemon juice, salt and black pepper. Serve warm.
