Ingredients

  • Wholemeal self-raising flour (or 150g wholemeal + 50g oat flour)

  • 100g milled flaxseed

  • Baking powder (if not using self-raising flour)

  • Eggs

  • Greek yoghurt

  • Olive oil

  • Maple syrup

  • Zest of lemons

  • Juice of 1–2 lemons

  • 1 tsp vanilla extract (optional)

  • 120–150g fresh blueberries

Lemon Drizzle

  • Juice of 1 lemon

  • Maple syrup


Method


1.

Preheat oven to 180°C and line a loaf tin.

2.

In a large bowl, mix together the flour, milled flaxseed and baking powder.

3.

In a separate bowl, whisk the eggs, Greek yoghurt, olive oil, maple syrup, lemon zest, lemon juice and vanilla.

4.

Pour the wet ingredients into the dry and mix until just combined.

5.

Gently fold through the blueberries.

6.

Gently fold through the blueberries.

7.

While still warm, mix the lemon juice and maple syrup and drizzle over the loaf.
