Cottage Cheese Bowl

 
 

This is our take on the viral cottage cheese and beef bowl…only we’re swapping beef for beans.

This bowl is packed with protein, plant points and healthy fates sure to keep you full and satisfied.

Ingredients


1/2 block of tofu

1/2 can of black beans, drained

1tsp of cumin

2 tsp smoked paprika

1/2 tbsp tomato paste

1/2 tbsp chipotle paste (optional)

1 avocado

1-2 sweet potatoes

150g of cottage cheese


Method


1.

Grate tofu and fry with cumin, smoked paprika, tomato paste and chipotle paste, if using. Season with salt to taste. Fry until crispy.

2.

Add black beans and continue to fry for a few more minutes. Cube the sweet potatoes and roast until cooked and crispy

3.

Assemble the bowl including the cottage cheese and avocado.
